Ingredients
SNICKERDOODLE PUMPKIN LOAF
- 7oz pumpkin puree (about 1 cup)
- 1 Quest Snickerdoodle Cookie
- 4 eggs, room temperature
- ¼ cup melted butter
- 1 tsp vanilla extract
- ½ cup zero calorie sweetener
- 1 ½ cups almond flour
- 1 scoop Quest Vanilla Milkshake Protein Powder
- ¼ cup flax meal
- 2 tbsp coconut flour
- 2 tsp baking powder
- 2 tsp cinnamon
- 1 tsp pumpkin pie spice
- ¼ tsp salt
Method
- Preheat the oven to 350 F and prepare a loaf pan with parchment paper and non-stick spray.
- In a mixing bowl, use a handheld mixer to beat the pumpkin, eggs, butter, vanilla, and sweetener until creamy, about 1 minute.
- In another bowl, stir together the almond flour, protein powder, flax meal, coconut flour, baking powder, spices, and salt.
- Add the dry ingredients to the wet and stir until no dry spots remain.
- Transfer the mixture to the prepared pan.
- Break the cookie into small crumbles and sprinkle over the top of the batter.
- Bake for 15 minutes.
- Remove and cover with tin foil and then return to the oven for an additional 30-35 minutes and cook through.
- Cut into 12 slices and serve.
