Ingredients
QUESTIFIED PUMPKIN SOUP & CRACKERS
- 1 tbsp olive oil
- 2 shallots, roughly diced
- 2 cloves garlic, chopped
- 15 ounces pumpkin puree or 1 sugar pumpkin (roasted, peeled, seeds removed and pureed)
- 2 cups chicken broth
- 1 cup water
- 1 tsp thyme
- ¼ tsp cumin
- ⅛ tsp ginger
- 1 bay leaf
- Salt and pepper to taste
- ¼ cup coconut cream
- 2 packages Quest Cheese Crackers
Method
- Add the olive oil to a large pot (preferably a dutch oven) and saute the shallots until tender.
- Add in the garlic and cook until browned.
- Add in the thyme and cook for 30 seconds before whisking in the pumpkin puree, chicken broth, cumin, ginger and salt and pepper.
- Use an immersion blender to blend until smooth.
- Add in the bay leaf and bring the mixture to a boil. Reduce heat to a simmer and cook for 15 minutes.
- If you prefer your soup to be thinner, add ½-1 cup water. Stir in cream before serving with Quest Cheese Crackers.
